Ingredients
- 1/4 cup low-sodium soy sauce
- 1 T fresh lemon juice
- 1 T ketchup
- 2 t brown sugar
- 1 t Worcestershire sauce
- 1/4 t crushed red pepper
- 4 garlic cloves, minced
- 1 (1-pound) pork tenderloin, trimmed and cut into 1/2-inch cubes
- Red pepper- cut into 1 inch squares
- red onion- cut into large slices
- 1/4 t kosher salt
Directions:
1. Place first 7 ingredients in a large zip lock bag. Add pork; seal bag. Refrigerate 1 hour, turning after 30 minutes.
2. Preheat grill to medium-high heat.
3. Remove pork from bag, and discard marinade. Thread pork evenly onto skewers; sprinkle evenly with salt. Thread peppers and onions onto skewers. Arrange skewers in a single layer on grill; grill 3 minutes on each side or until desired degree of doneness.
