Pork Tenderloin Kabobs

I have piles and piles of cooking magazines. I decided to go to them, this week, instead of Pinterest.  Cooking Light had a recipe for pork and peppers on the grill! They were easy and delicious!

Ingredients

  • 1/4 cup low-sodium soy sauce
  • 1 T fresh lemon juice
  • 1 T ketchup
  • 2 t brown sugar
  • 1 t Worcestershire sauce
  • 1/4 t crushed red pepper
  • 4 garlic cloves, minced
  • 1 (1-pound) pork tenderloin, trimmed and cut into 1/2-inch cubes
  • Red pepper- cut into 1 inch squares
  • red onion- cut into large slices
  • 1/4 t kosher salt
 Directions:
1. Place first 7 ingredients in a large zip lock bag. Add pork; seal bag. Refrigerate 1 hour, turning after 30 minutes.

2. Preheat grill to medium-high heat.

3. Remove pork from bag, and discard marinade. Thread pork evenly onto skewers; sprinkle evenly with salt. Thread peppers and onions onto skewers. Arrange skewers in a single layer on grill; grill 3 minutes on each side or until desired degree of doneness.
