Fall is Soup Season

Fall to me, means soup. I love a nice warm bowl of soup on a cold day.  Here are a few of my favorites:

Goat Cheese Tomato Soup


Tortellini Soup

Our family favorite is Hamburger Soup

Hamburger Soup

1lb. Ground beef
4 c. water
1 (14 1/2 oz.) can diced tomatoes
3 medium carrots, sliced
1 medium onion, chopped
1/2 cup chopped celery
4 beef bouillon cubes
11/2 tsp. Salt
1/4 tsp. Pepper
1/4 tsp. Dried oregano
1 can corn (drained)
1 can green beans (drained)
1 can white potatoes (drained)

In a large pot, brown beef, drain. Add next 9 ingredients; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Add beans, corn, and potatoes; cover and simmer 15 minutes longer.  Enjoy!
