Nativity Sign & Christmas Decorations

This little sign here was part of the reason I was so busy this Christmas! I posted a picture of my decorations and had so many requests for this sign, that I bought the commercial license for the design and created a "sign factory." I think I made and sold/gifted 25 of these puppies. The sign is available on my Etsy shop. 

I had the boards cut at Lowes, stained them (Kona & Barnwood), and then cut out the vinyl. Next year, I think I might try to stencil them, because I think it will go faster. 


I loved my new light up JOY sign from Big Lots and my red/white/silver/gold tree. Well, actually I loved all of my decorations! The wreath on my door was a fresh cut wreath from Lowes that I picked up while shopping for the wood.

Zucchini Lasagna Roll Ups

These are one of my new favorite go-to recipes! They are healthy and delicious! I used some of my summer zucchini that I had grated and froze. It mad it super easy to just pull it out of the freezer! 










Ingredients:

8 lasagna noodles
1 tsp olive oil
3 cloves garlic, crushed
2 medium zucchini
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 large egg, beaten
1/2 tsp salt
pepper
1 3/4 cups Marinara sauce
1/2 cup mozzarella cheese, shredded
fresh basil for garnish


Directions:
Cook lasagna noodles according to package directions. 

Grate zucchini and squeeze dry. I use my food processor, it is super fast! 

Preheat the oven to 350°F. Pour about 1 cup sauce on the bottom of a 9 x 13-inch baking dish.

Cook garlic and olive oil over medium heat for about 1 minute; add zucchini, salt and pepper to taste and cook about 4-5 minutes, until soft.

Combine the cooked zucchini, ricotta cheese, Parmesan cheese, egg, salt and pepper in a medium bowl.

Pat the lasagna noodles dry with a paper towel. Spread ricotta mixture evenly over the noodle. Roll up the noodle, and place in baking dish. Repeat with remaining noodles.

Pour the remaining sauce over the lasagna rolls and sprinkle mozzarella cheese on top of each roll. Cover with foil and bake for about 40 minutes. Top with fresh basil. Enjoy! 


I think this would also make a great freezer meal, however, I never had any leftover to freeze! :)

Scarlett

I love how this outfit and birth announcement sign turned out (I framed the sign, but didn't get a picture)! When I delivered it, I took my camera and did a little newborn photo shoot with this little snuggle bug! I think I finally have the newborn photography thing figured out. I'm still not a professional, but I am getting better.

Rock Chalk Baby Hawk

I have a friend whose kiddo calls burp cloths her "burpie" I thought that was so cute! She carries it around like a blanket. Gotta love some KU burpies and a cute onesie to go with.  I had a lot of baby showers the month of November and was busy making lots of burp cloths and onesies!

Stitch Fix Lately

I'm still loving my Stitch Fix! Almost everything I wear from them, I get compliments on. I have a teacher friend that whenever she likes one of my outfits, she has just started to say, "Let me guess, its that Stitch Fix thing." For Christmas, I put a Stitch Fix gift card in the family game as my favorite thing, and got my mom and sister signed up as well! My October Fix, my mom loved too. She kept one of the shirts. 

If only this dress was the next size up! I loved the comfy look/feel of it, but it was too tight. The necklace was also a little too much. 

I kept this aztec print shirt. It is great to throw on with jeans!

Another one, I wish would have fit better! These cobalt blue skinny jeans didn't fit!

This was my birthday outfit, with a Stitch Fix shirt and leggings! So comfy and a great color too!
I get so many compliments on this green cardigan. I wear it a lot, it is so comfy!
My November Stitch was the first time I kept everything! I loved all of it. This cardigan is very warm and I wore it as a coat while I was Christmas shopping. 
A fun scarf, another one that I get compliments on! 
This is out of order, but I did not keep this. It was too plain.

Happy New Year!

Happy 2015! I rang in the New Year at Starlight Theater at their Prohibition party. It was fun dressing up in 1920's gear!




The end of 2014, I kind of fell off the blogging train, and was more focused on my Etsy shop! The holiday season was super busy! My sister, Brother-In-Law, niece, and best friend were all in town too! Stay tuned for some fun things I have been working on!

Today, as I start 2015, I have written about 20 blog entries, so you should be set to have a blog to read  at least every Monday, Wednesday, and Friday through January and February!
