This salad was so great for a hot summer day! I used fresh lettuce from my garden, Brianna's Poppyseed dressing, strawberries picked fresh from the farm, red onions and leftover Southwest Steak.

Strawberry Salsa
This recipe was a perfect way to use some Serrano peppers in my garden. As of July 19th, I have had over 65 Serranos from 2 plants! I also used herbs from my garden and freshly picked strawberries!
Strawberry & Serrano Pepper Salsa
Ingredients
1 large carton of organic strawberries
2 large organic tomatoes
1 Serrano pepper (more if you like it hot)
1/8 cup cilantro, chopped
1/8 cup basil, chopped
5 mint leaves, finely chopped
1 tablespoon of honey
1 teaspoon of sugar
1 tablespoon of limejuice
Splash of balsamic vinegar
Directions
1. Remove the stems from the strawberries and dice them.
2. Dice the pepper.
3. Cut the tomato in half and squeeze out the seeds.
4. Dice the tomato slices.
5. In a large bowl, add the diced strawberries, diced
tomatoes, cilantro, basil, Serrano pepper, honey, sugar. Stir just enough to
mix.
Serve with tortilla chips or as a bruschetta!

Strawberry Shortcake
When you go strawberry picking, you have lots of strawberries to use up before they go bad. I needed a dessert for a party adn whipped this up.
Ingredients:
Premade Angel Food Cake
1 box instant vanilla pudding
1 2/3 cups skim milk
1 16 oz container of lite cool whip
2 cups of strawberries, sliced sprinkled with sugar
Directions:
Mix pudding and milk in mixer. Let sit for 5 minutes.
Add cool whip to pudding and mix.
Tear or cut up angel food cake into chunks (See picture)
In a 9x13 pan, cover the bottom of the pan with half of the angel food cake.
Cover the cake with 1/2 of the pudding mixture.
Cover with 1/2 of strawberry mixture.
Repeat layers.
Chill and serve!
Perfect summer treat! Light and slightly sweet!

Strawberry Lemonade
After going strawberry pickin', I had 3 pounds of strawberries to use in a variety of ways! I made this delicious Strawberry Mint Lemonade to enjoy on the patio.
Ingredients:
Simply Lemonade
Sliced Strawberries (you can add a little sugar to them if you want!)
Mint- 3-4 leaves
*optional- Strawberry Vodka
Directions
Muddle the strawberries & mint in a glass. Add ice and lemonade! Enjoy!

Strawberry Pickin'
Last weekend I visited the Wohletz Farm U-Pick Strawberry Patch. It is a family owned farm, right outside of Lawrence. I saw a nice article in the KC Star, and really wanted to do it. I sent it to my friend, and she picked a date! I love fresh strawberries! Together we picked 14 pounds of strawberries! I think the the girls ate a pound too, right off the plants!
When we got there, they gave us buckets, and we were assigned an isle to pick from. There was no shortage of strawberries! They were easy to find and pick. It was a great experience, and we can't wait to go back.
